cheese

as crusty bubbles climb the pan
I feel that I am aging..
the wait, for me is whey too long
and I start salivating..

bacteria flies all around
this great and lovely nation
but for me, success is found
in this great fermentation

a pressing need to get it right
so no one does this better
not Monterey Jack nor Stilton, Blue
will ever beat my cheddar

Velveeta please, you are not cheese
I think you are absurd
your shiny orange skin is gross
you are more cad than curd..

why would I have that processed stuff
that makes my taste buds buckle
when I can have the real thing
sharp cheddar by the truckle

an ode to cheese, it may not be
the greatest poem you’ve read
but when you have a hunger
there’s nowt beats cheese and bread

    Tew eeytz cheyyz izz tew pleeyz yoarseylbf, gybbs yew ae gud feeyln, ai laiyuks Havarti, Brie, Medium Sharp Cheddar, Baby Swiss, any good cheese is worth eating, try this next time you make a grilled cheese, dip a knife LIGHTLY into the pickle relish (maybe 10 to 15 pieces) smear equally across the bread, put slice of cheese on it, dip knife VERY lightly into Mustard jar, leave HINTS of Mustard across slice, put bread on & butter & grill, NOW taste a really differt but subtle grilled cheese,…………ENJOY!!!!!!!!!!!!

        Β Β Β Β Β Β Β  Pickle is TOO much, you want a hint of relish on one side (10 to 15 pieces on the bread, spread evenly) with a tinyΒ little touch of plain Mustard on the other side of the cheese, then grill & taste the “hints” of flavor rolling into your mouth with each bite,…………A Biker TooΒ

            My Brother-in-law as a starving musician in Boston used to stick a bare wire in each end of a big pickle & plug it in to see the pickle light up & cook in 20 seconds, unplug, eat, lol, worked for him, don’t know if he’s done that here or not!!

        • In TTI when we refer to a pickle, unless we specify it generally applies to what we call a sweet or sandwich pickle, which is a mix of chopped veg, pickled in vinegar, spices, and sugar, the most popular of which is probably Branstons

            Relish is 1/4 inch squares, there’s just enough on the bread to cover the very bottom of a teaspoon, salad squares are the next size up & slices (cross section) then stackers, lengthwise & finally the small sweet & dill going up to the BIG dills, my BIL would cook one of these by plugging in a bare wire in each end then plug it in, pickle lights up & cooks for you in 20 seconds!!

                Here we serve “Fried Pickles” at outdoor fairs and events, usually from a truck. It’s a gigantic sour pickle (usually a gherkin) that is dredged in four then dipped in pancake batter, then it’s deep fried to a crispy crunch. It’s actally revolting and fanstatstic, all at the same time.

    • Thank you πŸ˜€ Many years ago I used to work near a sandwich shop that did the best cheese and pickle on a baguette, and a delicious carrot cake. I think I ate the same thing everyday for about two months solid πŸ˜€
